Hilo Fish maintains inventory in port cities on every coast of the United
States with easy access to major highways and airports, thus decreasing transit
time and cost. We use only state of the art freezer facilities with fully
redundant refrigeration systems. This helps insure that product integrity is
maintained from the factory to delivery.
To deliver premium quality to our customers, we use advanced brine, nitrogen,
or blast freezing methods at cryogenic temperatures to rapidly accelerate
freezing. The result . . . color, meat texture, moisture, and delicate
taste are retained thus favoring the attributes of just-caught fish.

Our products are produced by USDC Approved Facilities. This guarantees that
the product we purchase has been produced under the United States FDA mandated
HACCP Program illustrated in regulation 21 CFR Part 123. All of our products
are labeled to comply with the Country of Origin Labeling
(CoOL) law. We have Quality
Control employees working side by side with our overseas suppliers to ensure
all regulations are fully adhered to and that we are providing the highest
quality to our customers.

Hilo Fish Company is also licensed under U.S. Patent 5,972,401 to purchase and
sell Tasteless Wood Smoked Fish Products. This makes us one of
only a few companies in the world able to indemnify our customers against patent
infringement of Tasteless Smoked products.

Hilo Fish Company, Inc. is engaged in worldwide distribution, processing,
harvesting and marketing of assorted fresh and frozen seafood products. Hilo Fish maintains offices in New Jersey, Hawaii,
California and The Philippines. We source from production plants and
fishing fleets positioned around the globe. We believe in developing a dedicated
working relationship emphasizing high quality seafood products under a
global perspective.
Hilo Fish possesses an in-depth knowledge of the major fisheries targeting tuna and
other highly migratory species as well as over fifteen years' experience grading
tuna species for the Japanese markets. Hilo Fish operates globally with a HACCP
certified workforce and believes in a hands-on approach for every aspect of our
business ventures. We source from over 20 different countries and we continue to participate in
establishing joint ventures harvesting quality seafood worldwide.
Hilo Fish Company has successfully demonstrated that by participation with local
business, close cooperation with government agencies, a willingness to become a
part of the local community and our commitment to enhancing the local economy
are our greatest guarantees of success. Accordingly, we have focused on using
local workers to process value-added product, purchase from local fishermen
and provide technicians with training in advanced seafood harvesting,
handling and processing procedures. All of this has helped HFC gain a significant
position in the food service and retail business in the United States.
