It starts with the fish . . . The premium quality you receive begins the moment our fish are caught. Only Tuna of prime red meat color and wholesome condition is selected. They yield finished Loins, Steaks, Saku Blocks, and other products. A unique process, for which a patent has been granted, uses wood smoke filtrated through chilled water to remove heat and smoke taste. The process of applying cold, filtered, wood smoke to our fish preserves the color, taste and texture of the fish.

Even though Hilo Fish is one of the largest importers of product manufactured with processed smoke our focus is not volume, but quality. Past experience has shown that quality control and traceability throughout the value chain will help guarantee our customers a desirable and safe product.

Hilo Fish Company is a major importer of quality fresh seafood. We source heavily out of the South Pacific in addition to countries in Southeast Asia. Containers of fresh products are flown daily into Los Angeles, where we have our sales office and facility conveniently located just five minutes away from the Los Angeles International Airport.

All fresh fish are carefully checked and graded upon receiving and then packed according to our customers' orders. And since our products are stored in the coolers of freight forwarding company Commodity Forwarders, Inc., we have the ability to have our products picked up by customers 24 hours a day, 7 days a week and easily shipped out to any part of the country.
